My journey in restaurants has brought me so much pleasure and so many wonderful memories, from both sides of the table. I hope that after reading this book when you enter a restaurant, instead of just expecting a meal, you will have more of an understanding and appreciation of all that has been done on your behalf by the restau-ranteur and staff, and by doing so you will realize the stage is set and the cast waiting for you to orchestrate a beautiful evening.

You have the tools —take the time to think of whom you are meeting, where you are going, and what would make it even more special. Create those unique and magical moments and enjoy them.
